Well, I said before that I suck at blogging. This one’s a little late but it’s still Friday.

I’m actually going to take a little departure from talking about books today and talk about something that many people are doing right about now: summer entertaining.

After months and months (and in my case, months) of winter, it’s time to get outside and do some entertaining on the patio or deck that’s that’s been snow covered for the majority of the year. Now I don’t know about you, but my husband and I love to entertain outdoors.¬†Barbecues¬†are a staple in our house and week make everything from steak, burgers and hot dogs to pulled pork and brisket. But I’m always looking for something different to serve as a starter or even as a light snack. I mean, as much as I love potato chips (and I do love my potato chips), they do tend to get old.

So last week, I had a good friend over for dinner and decided to try something new. It turned out wonderfully, if I do say so myself. So delicious and simple. All you need is a cucumber and spinach dip.

Was the cucumber. Don’t peel it because the peel looks so fantastic. Cut the cucumber into half-inch slices. We used an English cucumber but you can easily use a field one.

Hollow out the slice of cucumber halfway, so there’s still a bottom to it. Then simply fill the hole with spinach dip.

That’s it. Easy-peasy, lemon squeezey, as my five-year-old would say. But so good.It’s cold and creamy and crunchy all at the same time. I don’t have a melon baller so I actually used a teaspoon to hollow out my cucumber.

Try it and gather all the praise for something so simple and delicious!
